T’s Strawberry-Pineapple Smoothie

Prep Time: 10 Minutes
Ready in: 10 Minutes
Yields: 1 Serving

INGREDIENTS:
1 container frozen strawberries
½ cup orange juice
3 scoops pineapple Sherbet/yogurt

DIRECTIONS:
In blender, combine frozen strawberries, Sherbet/yogurt, and orange juice. Blend until smooth. Pour into a tall glass and serve.


Just Chilling- Out Smoothie

Prep Time: 5 Minutes
Ready in: 5 Minutes
Yields: 2 Servings

INGREDIENTS:
2 cups frozen strawberries
Strawberry yogurt
½ cup orange juice
2 cups ice
1 banana
1 (8 Ounce) Container

DIRECTIONS:
In a blender combine strawberries, orange juice, yogurt, ice, and banana. Blend until smooth.


Meatloaf

Preheat oven to 350
Add 1 cup large croutons to 1 cup beef broth and let stand.
In a large bowl mix:
1 large diced onion
¼ Cup pesto
2 large beaten eggs
¼ Cup roasted pine nuts 1 ½ Tablespoons Worcestershire sauce
1 ½ cup julienned sliced Spinach 2 lb Hamburger meat
Mix well (by hand) and add croutons
Thoroughly mix all ingredients, place in a loaf pan, and lightly spray
with Pam.
Cook for approx. 1 hour-15 minutes


Easy Meatloaf

Add the following to 2lb hamburger meat:
½ cup Dijon mustard
15 crushed saltine crackers
1 package Meatloaf mix
Mix well by hand.
Place in loaf pan, and cook for 1 hour-10 minutes.
Optional : Cover with Colby Cheese and cook for 3-5 minutes until
cheese melts.


Pigs-In-A-Blanket (Cabbage Rolls)

Place 8 dark green (outer leaves) of Cabbage (cut away the thick middle
vain), in hot water with 2 Tablespoons of oil, and blanch for 3
minutes.
Then place in large bowl of cold water
To 2 lb hamburger meat, mix in (by hand):
1 ½ cup rice ½ cup chopped onion
3 Tablespoons Chili powder 3 Tablespoons
Garlic Powder 16 oz Spaghetti sauce (pour
remaining sauce over completed dish)
Take one cooled cabbage leaf (vain side down) place one small scoop of
hamburger mix in leaf, and gently roll, and place into lightly greased
pan.
After placing 6-8 in pan cover with remaining spaghetti sauce, cover
with foil and bake for 1 hour-10 minutes.


Sweet Potatoes & Yams Recipes

Tyler’s “Magnificent 7” Sweet Potato Pie

Drain 1 40 oz. can of sweet potatoes and place in a large bowl. Add:
1 stick melted butter 1 cup sugar (or Splenda)
8 oz Whipped cream
½ Tablespoon Nutmeg
½ tablespoon vanilla ½
Tablespoon Cinnamon
2 eggs
Mix in spices first, then the other ingredients.
Let this sit overnight Place in 2
ready-made, deep-dish crust, and bake for 50 min. at 325 degrees. Let
cool and enjoy.


Candied Yams

Peel 4 medium sized sweet potatoes wash and slice into ½ inch coins.
In a large sauce pan with cover, lightly butter the bottom of the pan
and layer
In 1/3 potato coins, cover with:
a light dusting of Cinnamon, Nutmeg, 1/3 cup sugar, and 1/3 stick of
butter. Repeat this layering process with 1/3
potatoes, and other ingredients. There
should be three layers. To 2 Tablespoons of water add 1 teaspoon
vanilla, and pour over potatoes. Tightly cover and let cook for approx.
35 minutes.


Quick Baked (microwave) Potatoes

Thoroughly wash a medium size Sweet Potato, place a deep cut into the
potato, and wrap in a water saturated paper towel. Microwave for 10-12
minutes or until potato is done.


Sweet Potato Fries

Wash, peel, slice, and cook potato as you would a white potato fries.
Sprinkle on sea salt or season salt and enjoy.


Caribbean Cooking Show Recipes

Rice and Peas (or Kidney beans)

Add the following to two cans of kidney beans
1 Table spoon Garlic
1 Table spoon Salt
-Then add-
3 Cups water
1 teaspoon thyme
½ cup coconut milk
2 chopped scallions
-Bring to a boil-
Add 2 cups rice
Cover and cook until rice is done and most of the water is gone.


Curry Chicken

In a large saucepan, add:
1 Tablespoon Vegetable oil
2 teaspoons chopped garlic
2 chopped Scallions,
1 teaspoon pepper
1 large Table spoon Curry powder
1 teaspoon allspice
½ cup chicken broth
1 teaspoon Ginger
Cook for 5 minutes. Add ½ Chicken (cut into pieces)
Cook on medium heat for about 30 minutes
Add 1 large diced potato
Cook until potatoes are tender


Jerk Pork

1 lb. Pork Tenderloin (sliced into 1inch diameter pieces)
½ cup Jerk Seasoning
¼ cup Soy Sauce
Let it marinade over night if possible. Simply grill to perfection!
This can be placed over white rice or over a bed of lettuce for a
delicious salad.


Fried Plantain

Place enough oil to deep fry the Plantain on med-high heat.
Make sure the Plantain is extremely ripe
Gently peel and slice on an angle.
Carefully place the plantain in the hot oil and remove after it turns
golden brown.
Optional: gently sprinkle w/sea salt or season salt


Rasta Pasta

Boil 2 cups Pasta (red, yellow & green in color) until done. Rinse in
cold water and drain
Add sliced red, green and yellow peppers
¾ cup pecans
½ cup feta cheese
½ cup Red Vinaigrette dressing with 3 Tablespoons apple juice.
