Baby Carrots & Raisins


  • 1 pound fresh baby carrots
  • 2 tablespoons water
  • ¼ cup raisins
  • ¼ cup sliced almonds
  • 2 tablespoons butter
  • 3 tablespoons honey
  • ¼ teaspoon cinnamon
  • Salt to taste


  1. Place carrots and water in a microwaveable dish. Cover and microwave (about 10 min.) on high until the carrots are tender. (Stir halfway through cooking.)
  2. Drain the water.
  3. Stir in the rest of the ingredients, cover and microwave on high for 1 to 2 minutes.
