Black Pepper and Cumin Rice with Cashews

Ingredients

  • 1 cup basmati rice
  • 1 Tbsp. canola oil
  • 2 to 4 curry leaves (optional)
  • 1 dried red chili pepper
  • 1 tsp. black mustard seeds
  • 1 tsp. urad dal
  • 1/2 cup chopped yellow onion
  • 1 tsp. black pepper and cumin powder
  • 1/2 teaspoon salt
  • 1/4 cup dry roasted cashews

Directions

  1. Cook rice in rice cooker, or cook rice in 2 cups of water. Set aside.
  2. Heat oil in a wok or in a large skillet over medium-high heat. When oil is hot, but not smoking, add curry leaves and red peppers. Stir briefly. Add mustard seeds and urad dal. Cover and heat until mustard seeds pop and urad dal is golden brown.
  3. Add onion and cook for a minute.
  4. Add cooked rice to the onion mixture and stir well with spoon.
  5. Add black pepper and cumin powder to rice. Add salt and mix well.
  6. Add cashews and stir well into rice.

Shrimp Masala

Ingredients

  • 1 Tbsp. oil
  • 2 to 3 slivers cinnamon stick
  • 1 tsp. cumin seeds
  • 1/4 cup finely chopped onion
  • 1/4 cup finely chopped tomato
  • 4 to 5 cloves minced garlic
  • 2 Tbsp. minced fresh ginger
  • 1/2 tsp. turmeric powder
  • 1 tsp. curry powder
  • 1/4 cup tomato sauce
  • 1/2 tsp. cayenne powder
  • 1/4 tsp. salt
  • 1/2 tsp. black pepper and cumin powder
  • 1 pound fresh shrimp, peeled and deveined
  • 1/4 cup chopped cilanto

Directions

  1. Place oil in an iron skillet over medium heat. When oil is hot, but not smoking, add cinnamon stick, and cumin. Stir- fry until spices are golden brown.
  2. Add onion, tomato, garlic, and ginger. Stir-fry for a few minutes.
  3. Stir in turmeric powder, and curry powder.
  4. Add tomato sauce, cayenne powder, salt, and black pepper and cumin powder. Blend the seasonings well and simmer for a few minutes.
  5. Add shrimp and cook with the seasonings. Cook until shrimp turns pink.
  6. Garnish with cilantro.

Green Beans with Coconut Poriyal

Ingredients

  • 1 Tbsp. oil
  • 2 to 4 curry leaves
  • 1 tsp. black mustard seeds
  • 1 tsp. urad dal
  • 3 cups green beans, diced
  • 1 Tbsp. minced ginger
  • 1 green chili pepper, chopped
  • 1/4 tsp. salt
  • 1/4 cup fresh shredded coconut (unsweetened coconut powder)

Directions

  1. Heat oil in a skillet over medium heat. When oil is hot, but not smoking, stir in curry leaves, mustard seeds, and urad dal. Cover and heat until mustard seeds pop and urad dal is golden brown.
  2. Add green beans and stir well. Add beans, ginger, chili, and salt. Cover and cook over medium heat. Mix well.
  3. When beans are tender add coconut powder. Stir well.
