Broccoli Soup

  • Blender
  • Sharp knife
  • Measuring spoons / cups
  • Serving Bowl

Ingredients

  • 2 cups broccoli (include stalks)
  • 1 cup fresh or unthawed frozen corn
  • 1 ripe avocado (1/2 cubed)
  • 1/4 cup red pepper
  • 1/4 cup green pepper
  • 1/4 cup onions
  • 1 garlic clove
  • 1/2 date
  • 1/4 extra virgin olive oil
  • 1 cup almond coconut water
  • pinch sea salt
  • 1-2 tablespoons Mrs. Dash Extra Spicy Seasoning

Directions

  1. Blend all ingredients until desired consistency and chill.
  2. Garnish with broccoli florets, corn, diced red pepper, cherry tomatoes & walnuts
