Blueberry Raspberry Torte

Equipment required:

  • Knife
  • Measuring spoons / cups
  • Food Processor
  • Microplane grater

Ingredients:

  • 2 cups raw walnuts
  • 2 cups raisins
  • 1 cup Medjool dates marinated in fresh squeezed lemon / lime juice
  • 2-3 cups blueberries
  • 2-3 cups raspberries
  • Juice of dates

Instructions:

  1. Blend walnuts and raisins until smooth and creamy consistency.
  2. Spread on plate to form crust as base for torte.
  3. Blend dates and juice until creamy.
  4. Spread date paste on torte crust.
  5. Top off with blueberries and raspberries.
