Cauliflower Mashed Potatoes

Ingredients:

  • 1 head cauliflower
  • 1 cup cashews, soaked in water
  • chives
  • parsley
  • garlic
  • 1 tablespoon lemon juice
  • 1 teaspoon dulse
  • pinch black pepper
  • fresh dill
  • 2 tablespoons nutritional yeast
  • 1 cup extra virgin olive oil
  • water

Instructions:

  1. Blend cashews and cauliflower, add lemon juice, yeast, dulse and olive oil
  2. Blend again and add black pepper and salt to taste
  3. Add water if necessary to alter consistency
  4. Place “potatoes” in large mixing bowl
  5. Mince chives finely, and fold into mixing bowl
  6. Garnish with chive
