Cauliflower Mashed Potatoes
Ingredients:
- 1 head cauliflower
- 1 cup cashews, soaked in water
- chives
- parsley
- garlic
- 1 tablespoon lemon juice
- 1 teaspoon dulse
- pinch black pepper
- fresh dill
- 2 tablespoons nutritional yeast
- 1 cup extra virgin olive oil
- water
Instructions:
- Blend cashews and cauliflower, add lemon juice, yeast, dulse and olive oil
- Blend again and add black pepper and salt to taste
- Add water if necessary to alter consistency
- Place “potatoes” in large mixing bowl
- Mince chives finely, and fold into mixing bowl
- Garnish with chive
